Ingredients
16ozspaghettiwheat or gluten free
4slicesbaconchopped
½cuponiondiced
4clovesgarlicminced or pressed
1 ½cupfrozen peas or fresh peas
½tspsalt
¼tsp pepper
1lemonjuiced
2tbspolive oilextra virgin
½cupparmesan cheesegrated
Instructions
In a large pot, bring water to a boil and salt liberally.
Cook pasta according to package directions until pasta is al dente. Take care not to over cook.
In a separate large skillet, cook chopped bacon and onions over medium heat until bacon is crisp and onion is soft.
Add peas, garlic, salt, and pepper and cook for a couple of minutes taking care not to burn garlic.
Drain pasta, reserving a cup of water from the pasta. Add pasta to bacon and pea mixture, and toss with lemon juice, olive oil, and a little bit of the reserved pasta water to loosen the sauce.
Top with grated parmesan cheese and toss the pasta to combine. Taste and adjust salt and pepper if needed.
