Ingredients

  • 3 slices bacon chopped
  • 1 small onion diced
  • 1 celery rib diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 1 bay leaf
  • 1 ½ c dried black eyed peas rinsed
  • 5 c water or broth
  • 1 ½ tsp dried thyme
  • ¼ tsp paprika
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp Italian seasoning
  • 1 tsp salt or more to taste
  • tsp cayenne pepper

Instructions

  • In a soup pot, brown chopped bacon until crisp.
  • Add chopped celery, onion, and bell pepper and sauté for about 5 minutes or until the vegetables begin to slightly brown. You may need to increase the heat.
  • Add garlic, bay leaf, black-eyed peas, water and seasonings.
  • Bring to a boil, reduce heat to a simmer, cover and cook for about an hour until peas are tender.  It could take up to 1 ½ hours.
  • Serve over rice or as is.
