Ingredients
6cunsalted homemade brothIf yours is too thick, add an additional cup of broth or water.
½conion
4clovesgarlicpressed or minced
2 cups dried great northern beans, rinsedor 3-4 cans of pre-cooked
2 ½tspcumin
2 ½tsp saltuse less if your broth is salted
2tspdried oregano
24 ozcanned chopped green chilis
3cupsleftover shredded chickenor 2-3 raw chicken breasts
1cupfrozen corn
Instructions
Place all ingredients in slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
If using leftover shredded chicken, add it in the last hour. If using raw chicken, add it in the beginning and before serving, remove and shred chicken and add back to slow cooker.
Notes
Serve with any of the following toppings: sour cream, avocado, tortilla chips, cheese, and cilantro.
