Stuffed biscuit breakfast muffins

A complete grab and go breakfast stuffed into a biscuit muffin! Perfect to reheat throughout the week when you are in a hurry.

  • 1 3/4 cup flour
  • 7 T. butter
  • 1/2 tsp salt
  • 1 T. baking powder
  • 3/4 cup milk
  • 5 eggs
  • 5 pieces of bacon
  • shredded cheese


  1. Scramble eggs as desired. Make sure to season with salt and pepper. Set aside.
  2. Cook bacon in oven at 350 for 15 minutes or until done. Set aside.
  3. Mix flour, salt, and baking powder together in a bowl.
  4. Cut in butter. I squish it around in my fingers until it is well incorporated.
  5. Add milk and mix until it becomes a shaggy dough.
  6. Turn out on a floured board and knead until it is a smooth dough.
  7. Cut into eight pieces.
  8. Roll each piece out into a 5-6 inch circle.
  9. Fill each circle with a small portion of egg, bacon, and cheese.
  10. Fold up edges and pinch seams.
  11. Place seam side down in a greased muffin pan.
  12. Bake at 425 degrees for fifteen minutes until golden brown and puffed.
