Pork tenderloin with butternut squash and apples
A super simple one dish meal, perfect for a weeknight.
- pork tenderloin it should be two pieces in one package
- 1 butternut squash peeled and cubed
- 1 apple peeled and cubed
- garlic powder
- olive oil
Put pork tenderloin pieces in middle of baking dish.
Add squash and apples on both sides.
Drizzle with olive oil.
Liberally season pork with salt, pepper, and garlic powder.
Bake at 400 degrees for 25 minutes.
Drizzle honey over pork, squash and apples and bake for an additional 5-10 minutes, or until pork is cooked through.
When done, let pork rest and slice. Season with more salt, pepper, and honey if needed.
