Classic Italian Meatloaf

A classic Italian meatloaf that is simple yet packed with flavor. A true family favorite.

Ingredients

  • 2 slices of bread cubed
  • ½ cup milk
  • 1-2 T. butter or olive oil
  • ½ onion minced
  • 1 carrot shredded
  • 2 cloves garlic
  • 2 lbs. ground beef
  • 2 eggs
  • ½ cup fresh herbs chopped (rosemary, parsley, oregano, and thyme)
  • 1.5 tsp salt
  • ¼ tsp pepper
  • GLAZE
  • 4 oz. tomato sauce
  • 2 t. mustard
  • 2 T. maple syrup
  • 2 t. organic Worcestershire sauce Annie's is a brand I use

Instructions

  • Place bread in a large bowl with milk. Let soak while you are working on the rest of the meatloaf.
  • Cook onions, carrot and garlic in a skillet until vegetables are soft. Set aside to cool.
  • Combine beef, eggs, herbs, salt, pepper, and cooked vegetables to the soaked bread mixture. Mix until combined well.
  • Press into a loaf pan and bake in a 400 degree oven for 45 minutes. If you don't have a very lean beef, you will need to pour off grease before adding the glaze. If you use a grass-fed beef, you won't have any fat to pour off.
  • Mix together glaze ingredients in a small bowl and pour over the top.
  • Bake for an additional 15-20 minutes.
  • Let rest for a few minutes, slice, and enjoy!
