Spinach and apple salad with sweet Italian dressing
Spinach, apples, red onion, feta cheese, and sunflower kernels all dressed in a sweet Italian dressing
- 8 oz spinach
- 1 apple, chopped I used gala
- ½ red onion thinly sliced
- ¼ c sunflower kernels pecans, slivered almond, or pepitas could be subbed
- 4 oz feta cheese crumbled
- ½ c olive oil
- ¼ c red wine vinegar
- 4 tsp honey
- ½ tsp salt
- 1 tsp dried oregano
- ⅛ tsp black pepper
- ¼ tsp garlic powder
Place all of the dressing ingredients in a jar with a lid and shake until well combined.
In a large bowl add salad ingredients.
Toss well with half of the dressing and taste to see if it is well dressed. If you need more, add a little at a time until salad is lightly coated but not drenched.
