Ingredients

  • 3 lb chicken wings
  • 4 tbsp butter or ghee
  • ½ c Franks hot sauce

Instructions

  • Preheat oven to 400 degrees F.
  • Cut wings, separating the flat parts from the mini drumsticks. Cut the wing tip off as well.
  • Place wings on a rack, which is on top of a rimmed baking sheet to catch the fat that falls from the wings. Alternatively you could just place the wings on a parchment lined rimmed baking sheet. The part of the wing with the most skin should be facing up.
  • Bake at 400 degrees for about 45 minutes or until golden and crisp.
  • Flip wings over and increase temperature to 475 degrees. Cook for another 10-15 minutes until second side is golden.
  • While the second side is browning, melt butter in a skillet to start the sauce.
  • Add hot sauce, stir to combine and simmer for a few minutes. Add more butter if sauce is too spicy. It will mellow a bit when combined with the wings.
  • When wings are golden, remove from rack, toss in the sauce until well coated and serve immediately.
