Preheat oven to 400 degrees F.
Cut wings, separating the flat parts from the mini drumsticks. Cut the wing tip off as well.
Place wings on a rack, which is on top of a rimmed baking sheet to catch the fat that falls from the wings. Alternatively you could just place the wings on a parchment lined rimmed baking sheet. The part of the wing with the most skin should be facing up.
Bake at 400 degrees for about 45 minutes or until golden and crisp.
Flip wings over and increase temperature to 475 degrees. Cook for another 10-15 minutes until second side is golden.
While the second side is browning, melt butter in a skillet to start the sauce.
Add hot sauce, stir to combine and simmer for a few minutes. Add more butter if sauce is too spicy. It will mellow a bit when combined with the wings.
When wings are golden, remove from rack, toss in the sauce until well coated and serve immediately.
