Slow cooker black bean soup

A black bean soup made in the slow cooker with minimal ingredients.

Equipment

  • slow cooker
  • immersion blender or blender

Ingredients

  • 2 cups dried black beans
  • 4 cups water or broth
  • 1 cup prepared salsa I like a medium spice level
  • 1 red bell pepper chopped
  • 1 onion chopped
  • 1 tsp salt
  • 2 tsp chili powder
  • 1 ½ tsp cumin
  • ½ tsp garlic powder

Instructions

  • Rinse beans thoroughly and pick out any debris or unsightly beans.
  • Place beans and remaining ingredients in slow cooker and stir.
  • Cook on low for 8 hours until beans are tender.
  • Using an immersion blender, purée beans as much or little as you desire. Soup with thicken the more you blend.
  • Taste and adjust seasonings as needed.
