Simple cucumber and dill salad

A simple summer salad that highlights the bounty of cucumbers in the garden.

  • 1 lb. cucumbers sliced
  • 1/2 onion white or red, sliced thinly
  • 2 T. chopped fresh dill
  • 2 T. red wine vinegar
  • 1 T. apple cider vinegar
  • 1/2 tsp. salt
  • pepper to taste


  1. Place sliced cucumbers, onions, and dill in a bowl.
  2. Add vinegars, salt, pepper, and stir well to combine.
  3. Taste and adjust seasonings if needed.
  4. Refrigerate for at least 30 minutes to allow flavors to combine.
