Simple cucumber and dill salad
A simple summer salad that highlights the bounty of cucumbers in the garden.

Ingredients
- 1 lb. cucumbers sliced
- ½ onion white or red, sliced thinly
- 2 T. chopped fresh dill
- 2 T. red wine vinegar
- 1 T. apple cider vinegar
- ½ tsp. salt
- pepper to taste
Instructions
- Place sliced cucumbers, onions, and dill in a bowl.
- Add vinegars, salt, pepper, and stir well to combine.
- Taste and adjust seasonings if needed.
- Refrigerate for at least 30 minutes to allow flavors to combine.
