Made in the skillet in under 5 minutes, this easy recipe is truly a kid favorite.

They have that classic pizza flavor that the whole family loves but come together in just a couple of minutes. We all need an easy meal for our back pockets. You just can't beat crisp tortillas with melty cheese! Gets me every time.
I taught my older kids how to make this years ago so that they could make themselves an easy snack or lunch. It's one of their favorite meals that they can make in 2-3 minutes.
Ingredients
- tortilla: 1 tortilla per quesadilla. Any tortilla that will fit your dietary needs is fine: flour tortillas, gluten free, grain free, low carb, etc.
- pizza sauce: I prefer to make my own cheap pizza sauce with tomato paste. It comes together very quickly and made with pantry ingredients.
- mozzarella cheese
- pizza toppings: Any pizza toppings that you like are great here: pepperoni, sausage, bell pepper, banana peppers, mushrooms, onion, black olives, etc. I do recommend sautéing any raw vegetables before filling your quesadilla for best flavor and texture.
- fat for the skillet: I love to use butter because the flavor of a crispy buttery tortilla is magic. It does have tendency to burn so you could also use olive oil or a combo.
How to make a pizza quesadilla
- Preheat your skillet to medium-low heat.
- Meanwhile, spread a think layer of pizza sauce onto one half on a tortilla shell of your choice.
- Next add a layer of cheese.
- Then add your favorite toppings: pepperoni slices or any vegetables or meat that you enjoy.
- Fold over the other half of the tortilla.
- Melt butter or olive oil in the preheated skillet. If it browns too quickly, it's too hot.
- Add your quesadilla to the skillet and let cook for a minute or two until golden brown.
- Flip over and brown the other side. When the cheese melts and both sides are brown and crispy, your quesadilla is done.
- Transfer to a plate or cutting board and cut into thirds with a knife or pizza cutter.
How to make pepperoni pizza quesadillas for a crowd
Using a small skillet is great for a single serving, but if you are making multiples, I find that a big electric griddle works best.
Then you can assemble all your quesadillas ahead of time and cook a ton of them on the griddle at one time. It saves so much time rather than doing one at a a time.
What to serve with pizza quesadillas
If you want to round out the nutrition and make it a little a more filling, I suggest the following:

cut up raw vegetables
other no cook high protein foods: cottage cheese, Greek yogurt, smoothie
Quick and easy pizza quesadilla recipe
Ingredients
- 4 flour tortillas
- 4 tbsp pizza sauce
- 1 cup mozzarella cheese shredded
- 28 pepperoni slices
- favorite pizza toppings
- 4 tsp butter
Instructions
- Pre-heat a skillet or griddle to medium-low heat.
- Meanwhile, spread 1 tablespoon of pizza sauce onto half of a tortilla.
- Add ¼ cup of cheese evenly over the sauce on each tortilla.
- Add 7 pepperonis per quesadilla and any other toppings you like.
- Fold over the other half of the tortilla.
- Melt butter in the skillet or griddle and add the assembled quesadillas. Cook for a couple of minutes until golden brown on one side.
- Flip to the other side and cook until second side is golden brown and cheese is melted.
- Transfer to a plate or cutting board and cut into thirds.
Notes
- OR use 1 tsp of Italian seasoning instead of the oregano, thyme and fennel seed.
